{RECIPE} Almond Coconut "Shortbread" Slice




These easy to make slice-style dog treats smell absolutely fabulous - kind of like a shortbread thanks to the sweet scented coconut and almond meal; however, these don't involve any butter or added sugar. Doggone delicious according to our taste testers!


Almond Coconut "Shortbread" Slice (Dog Treats)

3 tbsp smooth peanut butter
1 egg
1/4 cup almond meal
1/4 cup rice flour
1/4 cup coconut flour
1/4 cup light coconut milk (can substitute, such as regular milk or water)
Plain carob, grated (see note)

Preheat oven to 180C. Mix ingredients into a crumbly dough and press firmly into a lightly greased baking dish. Sprinkle with grated carob. Bake for approximately 12-15 minutes until the edges are just golden and the biscuit is cooked through.  Cool before cutting to size for serving and storage.

Option: Almond Coconut Doggy Biscotti - These are soft slice treats. If your dog prefers a crunchier treat, you can rebake the sliced treats to crunch them up, like we do for human biscotti.
   
 
Tips and Tricks:
  • When using ingredients like peanut butter for dogs, go natural or take care when when shopping to avoid the artificial sweeteners, particularly xylitol, which is extremely dangerous for dogs. Xylitol may also be labeled under as sweetener code 967.
  • If you can't find plain carob, you can dust with carob powder (or mix it in for a "chocolate shortbread"), or experiment with other dog-friendly ingredients.
  • We used a 9x9 inch square pan for this recipe; however, you can adjust volumes or thickness (and baking time) to suit what you have available in your kitchen supplies. This is press-in dough, so you can also part-fill a larger pan if needed.
  • These treats can be frozen for longer storage.
